Sometimes you just want a cookie. Not a whole batch of cookies, just one single delicious chocolatey treat. Well now you can have a single microwave cookie, in just a couple minutes with this recipe for microwave cookie dough!
Oh, how we love making ourselves single serve treats in cups and mugs and plates using our microwave. Our Cup of Coffee Cake (in under five minutes) is our most popular post of all time, and 2-Minute French Toast in a Cup isn’t far behind. Now we have a recipe for microwave cookie dough to make yourself a one-minute chocolate chip microwave cookie on a plate. This could not be easier.
Now, a microwave cookie is not going to have a crispy browned exterior like a baked cookie, so don’t expect it to be exactly the same as your mom’s famous recipe. But what it does have is ooey, gooey, melty chocolate chips. And this microwave cookie dough can be ready in a minute. And you can make just one at a time. So it’s got some things going for it.

Let’s get to making a chocolate chip microwave cookie on a plate…
Chocolate Chip Microwave Cookie Recipe
Use a mug or bowl to mix your microwave cookie dough ingredients, and a plate to cook your microwave cookie.
Start with one tablespoon of butter. Soften it in the microwave for 6-8 seconds. Add a teaspoon and a half of sugar and a teaspoon of packed brown sugar (I used light brown). Stir them together with a fork until light and fluffy. Add a single drop of vanilla and mix again.
Now you want to add some egg. You only need a teaspoon or two of egg, so you can crack one, stir it up, and seperate out your bit for the cookie and use the rest to scramble. Or, if you are quickly becoming a microwave-baking-afficiando like myself, you could keep a carton of egg whites on hand, and just add a teaspoon from there. Mix.
Now add 2 tablespoons of all purpose flour, a pinch of baking powder, and a pinch of salt. Stir to combine.
Now add your chocolate chips and stir again. Remove your cookie dough to a plate, just dollop it in the center.
Microwave for 40 seconds. If it doesn’t look done yet, add another five seconds at a time. My microwave does my cookie perfectly in 45 seconds.
Single Serve Microwave Chocolate Chip Cookie
A single serve microwave chocolate chip cookie recipe.
- Prep Time: 5
- Cook Time: 1
- Total Time: 6 minutes
Ingredients
1 tbls butter
1 1/2 tsp sugar
1 tsp brown sugar (packed)
1 drop vanilla
1 egg, cracked and stirred
2 tbls flour
Pinch baking powder
Pinch salt
Chocolate chips, to taste (about 1 tbls)
Instructions
Soften butter in the microwave for 6-8 seconds.
Add sugar and brown sugar and stir with a fork until light and fluffy.
Add drop of vanilla and stir.
Add about 1 or 2 tsp of egg and stir.
Add flour, baking powder, and salt and stir to combine.
Add chocolate chips and stir again.
Dollop cookie dough onto a plate.
Microwave for 40 seconds. If it doesn’t look done yet, add another five seconds at a time. My microwave does my cookie perfectly in 45 seconds.

Put a scoop of ice cream on the top and you have a perfect dessert, snack, meal, etc. Whenever I make cookies, I freeze some dough in balls so I can always bake up some on demand. If I only need one, I usually go for the toaster over, but I’m sure the microwave would work.

i tried tripling this recipe to make 3 cookies. the first one spread all over the plate and only cooked in the middle (i clearly cannot count). when i put it back in the micro to cook it more, the microwave started sparking so i had to turn it off. i ate the rest of the batter. overall, a great success.

She didn’t post this but your coffeecake and her version (?) of single-serve/micro chilaquiles, quiche, and upside down cake. As a science who is a decent baker and ok cook, my micro-baking has been less than steller. “No Pudge” Brownies and egg dishes are dang simple, but love the portion control of it all. Plus little mess, immediate gratification, and no heating up a house in NC during the summer make these a must try. (Today we hit the asparagus festival in Stockton. Strawberry stand down the street is open, local asparagus is 99 cents a pound, we are so blessed with fresh produce. Hard to remember when I bought canned anything besides canned ‘maters or even frozen.) Thanks!

Well, don’t worry! There are so many different things you can substitute for eggs! Just do a little searching on the internet. My friend uses some sort of yogurt (weird, I know, but she says it tastes good…) but there are MANY other options too! Of course, some may not work so you might have to do some trials before you find one you like. Good luck and I hope this helps!!

You can use mashed banana instead of egg. It really works, and gives the cookie a REALLY nice, fruity sort of flavor.

I just tried this and failed to a point where I’m almost crying. I followed the instructions like the bible (I’m not religious, maybe that’s where I went wrong).
By the end of the 40 seconds, the dough had spread out on the plate and didn’t cook at all, it was a liquid-y mess. It definitely needed more than 2 Tbs of flour.
Let’s just say I washed it down the sink, but I will never be able to wash down the shame.

I tried this just now… I didn’t have chocolate chips though, so I added one tablespoon of cocoa powder instead and also added a huge lump of nutella in the middle of the dough before I microwaved it and it turned out to be awesome! Just a few comments –
Keep in mind that all microwaves vary in power so this may take less time. If you use margarine instead of butter – it may be a little softer/cake like. I didn’t soften the butter as mine was soft to begin with. If your butter/margarine is soft and you microwave it it melts and will not be able to be creamed. This would make a difference in how your cookie turns out. Also make sure you use stick margarine/butter, tub margarine is too soft for this.

Eating it right now. Delish! I doubled it and added 1/2 a small egg, stevia instead of sugar, and a little extra salt. Divided it and nuked them separately, exactly 1 min 45 sec, in my small microwave. Next time, since it doesn’t get crispy anyway, I’m going to try it as a mug cake. Thanks for the treat. I did it it works i replaced eggs with oil and used just white. I wanted firm but chewy cookie so added extra table spoon of flour. I used coco powder instead of choclate chips added just tiny bit of salt and cinnamon and sprinkled in couple palm fulls if peacans. Then to make sure stuck together beed 1 table spoon of water. I don’t normally leave comments, but I had to ask if others have tried this as a gluten-free cookie. Also, the title to the recipe includes the words “In A Minute”. That usually means 60 seconds.
I’ve used this recipe SO many times! It is incredibly tasty! Sometimes I’ll leave out the egg and eat the dough! 😀

1 tablespoon of flaxseed with 1 tablespoon of water pre heated in the microwave for 20 seconds substitutes for the egg. Another nice substitute is 1 tablespoon almond flour instead of 1 of the tablespoons for regular flour. Also, you can use cranberries instead of chocolate chips.
