In this, our second episode of Jaime’s Lazy Late Night Cooking Corner, the new show where I whip up last-minute single serve microwave treats every Thursday while wearing my robe, we will be whipping up a super simple and extra delicious blueberry cobbler. The addition of quick cook oats adds a nice texture to counteract the gloppiness microwave cooking can sometimes have, and bonus: no egg needed!

Single Serve Microwave Blueberry Cobbler in a Cup Recipe

In a cup or bowl, add two tablespoons butter, and melt in microwave (approx 20 seconds).
Add two tablespoons of milk to melted butter and stir.
Add the following ingredients to the bowl and combine:
1/4 cup flour
2 tsp sugar
2 tablespoons quick cook oats
1/4 tsp baking powder
Pinch salt
In a separate bowl or ramekin pile bueberries in (1/2 to 1 cup)
Pour batter on top.
Microwave for 30 seconds. Check for doneness. Microwave in 30 second intervals in done (in my microwave it takes 90 seconds).
Add whipped cream.
Gobble it up!

Delicious! Made some and it was enough to share with my daughter. Perfect for a treat when you want something sweet but not enough too overindulge. Definitely going to make it again!
