Welcome back to Jaime’s Lazy Late Night Cooking Corner, the show where I whip up last-minute single serve microwave treats every Thursday while wearing my robe. This week we are eschewing our sweet tooth and going full-on PMS salt-craving (which is truly where my heart lies) with a recipe for four-minute microwave potato chips. Who knew it was this easy? I did, and now I’m sharing that sacred knowledge with you. Use it wisely, women.

Now it’s time to get savory in a hurry with a potato.

4 Minute Microwave Potato Chips Recipe
Ingredients:
Potatoes
Olive oil
Spices of your choosing
Directions:
Wash and scrub your potato/potatoes
Slice thin with a mandolin
Place potato slices in a plastic bag
Add a tablespoon or so of olive oil (enough to coat all the slices)
Mash the slices in the bag to cover them all with oil
Remove your coated potato slices to a plate, evenly distributed so they aren’t in layers
Microwave until they just start to brown but are still floppy (start with 4 minutes, that is probably enough)
Remove to a cooling rack and sprinkle with spices (salt and pepper, or a seasoning mix)
Let chips sit until they are crispy.

Do you think sweet potatoes would work the same way?
I’ve tried it out, and yes it does. What worked for me was to sprinkle some bread crumbs over it to help with the crispiness. Without it mine were just soft and mushy (which isn’t so bad).
