Blueberry and Honey Wellness Pops for Kids

Blueberry-Honey-Wellness-Pops_on Pretty PrudentThis is the kid-friendly version of wellness pops because they are oh so sweet and delicious. I like to think of them as the farm-to-table version of Pedialyte popsicles. They are made with coconut water for hydration, blueberries for anti-oxidants and Vitamin C, and soothing honey for sore throats.

Blueberry and Honey Wellness Pops

Makes about 14 popsicles.

4 cups Blueberries
3 cups Coconut water
1/4 cup Honey
2 Tbsp Lemon juice

Heat coconut water, lemon, and honey in a saucepan over medium-high heat until honey completely dissolves.

Cool to room temperature and blend in your blender with blueberries.

If foam forms, let it sit for an hour and then skim the foam off the top.

Pour into molds. This is our favorite pop mold: Norpro Ice Pop Maker

Soak your popsicle sticks in warm water.

After an hour in the freezer, insert popsicle sticks.

Freeze for four to six hours, but preferably overnight.
