Garlicky Lemon Noodles

Nothing fancy here folks, I just had to snap a pic of tonight’s crazy easy and super delicious supper and share the recipe. I’ve been having a lot of trouble getting a healthy homemade dinner on the table with all of our after school nonsense but I think we have a winner here. I’m feeling good about my motherhood game today.

Like most Asian-inspired dishes, this recipe includes a good serving of protein, carbs, and vegetables, without a ton of fat, but my favorite thing about this meal is the unique lemony flavor mixed with the smoked meat and crisp veggies. Oh and watching the kids help themselves to seconds and thirds, that’s my favorite too. Here’s how to make Garlicky Lemon Noodles.

Garlicky Lemon Noodles

1 lb Broccolini (or chinese broccoli) cut into 1.5″ lengths, separate stalks from leaves and florets

1lb Linguini, cooked al dente, rinsed under cold water and drained

2 TBS Toasted Sesame Oil

1.5 TBS Corn Oil

2.5 TBS Minced Garlic

.25 tsp Crushed Red Pepper Flakes (or to taste)

1 Red Bell Pepper, thinly sliced

.5 lb Smoked Turkey, thinly sliced and cut into strips

Lemon Dressing (stir all ingredients together)

3 TBS Soy Sauce

3 TBS Chinese Rice Wine

3 TBS Lemon Juice

2 TBS Sugar

1. In a pot of boiling water, add the broccoli stalks and cook for 1.5 minutes then add the rest of the broccoli and cook for 1 more minute. Drain, rinse with cool water, and drain.

2. Heat a wok over high heat. Add the oils and heat until hot, 20 seconds. Add the garlic and pepper flakes and stir-fry for 10 seconds. Add the Bell Pepper and stir-fry for 1.5 minutes. Add the broccoli, turkey, and lemon dressing, and toss.

3. Place the noodles in a large serving bowl and spoon the sauce over them. Serve warm or at room temp.
