No-Bake Tahini Bars Recipe

I love to do a little meal planning, at least for breakfast, or I end up not eating at all. This no-bake tahini bars recipe is an easy one to whip up on Sunday night, then I have a superfood-packed breakfast bar ready to go every morning, all week long.

Tahini is a delicious paste made of sesame seeds. It imparts a nutty flavor and a rich texture that is so satisfying to eat. I love using it for these breakfast bars as a sort of “glue” to hold all the goodness of nuts, seeds, dried fruit, and superfoods together. It’s a little slice of rich, delicious, nutrient-packed heaven to start your day off right.

This tahini bars recipe is amazing because it is:

  • Filling enough to last until lunch

You can make this tahini bars recipe with pretty much any combination of nuts, grains, and dried fruits you have on hand. I make it a little differently each time – the “glue” of coconut oil, tahini, and honey stays the same every time, but sometimes I use cashews, sometimes almonds, sometimes pistachios, and it’s always delicious. You can also mix up the dried fruits, for these tahini bars I used dried cranberries and blueberries, but they are also delicious with dried apricots, dates, or even mangoes.

A No Bake recipe for Tahini Bars packed with superfoods.

Ingredients

1 cup pumpkin seeds

1/2 cup slivered almonds

1/4 cup pistachio nut meats

1/4 cup sunflower seeds

1 tbls chia seeds

1 tbls hemp seeds

1 tbls maca powder (I get mine at Trader Joe’s)

1/4 cup dried cranberries

1/4 cup dried blueberries (can use any dried fruits – dates and cherries also are delicious)

2 tbls coconut oil

1/2 cup tahini

1 tbls honey

1/8 tsp salt

Lemon zest

Instructions

Coarsely chop the nuts. Combine all seeds, nuts, and maca powder in a mixing bowl.

Coarsely chop dried fruits, or blend in a blender or food processor to make a sort of paste.

In a small pot, melt the coconut oil. Turn off the heat and add tahini and honey. Stir until smooth. Add dried fruit.

Pour mixture over nut and seed mixture and stir to coat.

Press into a parchment lined pan with the back of a wooden spoon. Grate lemon zest over the top as desired.

Freeze for about an hour. Cut into bars. Store leftovers in the refrigerator (these Tahini Bars will be crumbly and melty if left out).

Notes

Try using any combination of nuts or seeds. Try matcha instead of maca. Try dried dates or apricots in place of berries. Any combo will be delicious.
