We started to drool when we read this recipe idea from K. Fox on the Cucumber Mint Popsicle post:

All-time favorite sorbet that I’ve come up with? Pickled Ginger-Lemongrass-Thai Chili. Yeah. Sounds crazy, but it’s really crazy good. The lemongrass and sweet ginger flavor hit you first and is so refreshing, then at the very end that spicy chili comes through and we actually sweat a bit. Simply put one or two chillies (these are HOT), one stalk lemongrass (crack and crush the stalk first to release the aroma and oils), pickled ginger to taste, one cup water and 1/2 cup sugar into a pan, bring it down into a syrup then either churn it in an ice cream maker for small bowls, or pour into popsicle molds. Note: unless your kid is a champ with the spicy this is a better adult indulgence. Haha, and I’m not sure anyone could handle a whole paper cup’s worth. đŸ˜‰
