Cucumber Mint Popsicles

A few weeks ago reader ERIN sent us her cucumber popsicle recipe.  Loving the idea, I immediately went outside and picked a few.

These popsicles take just a couple minutes to throw together, and they taste so refreshing.  They were a hit so I had to make more, adding mint to the second batch. Deelish!

Note: I didn’t realize the cups were spelling “ritz” until just now. Cucumber Mint Pospicles
This recipe makes enough for 4 big or 8 little popsicles.

-1 peeled and seeded cucumber (you seed a cucumber by cutting in half and scooping the seeds out with a spoon – thank you Erin)
-1/2 cup mint simple syrup (in a pot bring 1/2 cup sugar, 1/2 cup water, and a a handful of muddled mint to a boil.  Strain out the mint and let cool.)  *mint optional
-Juice of one lemon (i didnt have a lemon, so I did 2 tablespoons of lime juice, still yummy)

1. Combine all the ingredients in a blender or food processor until evenly macerated.

2. Pour into molds and freeze.

I had more popsicle mix than would fit in my tiny IKEA molds so I used one of my ABC Paper Cups from Pint Size Social and a lollipop stick.

I loved it so much I made more batches just using the cups and popsicle sticks.

Could this be any cuter? These would be awesome for a summer birthday party, right?  Just peel the paper off…

That is hilarious! When the picture was scrolling down, that was the first thing I noticed – RITZ. I was imagining that you were commenting on how ritzy it is to make popsicles with paper cups…and then I read that it was an accident. I guess I shouldn't read so much into things.


We like mixed, fresh-picked berries (strawberries, blackberries and redcurrants at the moment), whizzed up with some plain yoghurt then frozen into our popsicles.

Jalapeno sounds dee-lish! Especially is mixed with pineapple!

All-time favorite sorbet that I've come up with? Pickled Ginger-Lemongrass-Thai Chili. Yeah. Sounds crazy, but it's really crazy good. The lemongrass and sweet ginger flavor hit you first and is so refreshing, then at the very end that spicy chili comes through and we actually sweat a bit. Simply put one or two chillies (these are HOT), one stalk lemongrass (crack and crush the stalk first to release the aroma and oils), pickled ginger to taste, one cup water and 1/2 cup sugar into a pan, bring it down into a syrup then either churn it in an ice cream maker for small bowls, or pour into popsicle molds. Note: unless your kid is a champ with the spicy this is a better adult indulgence. Haha, and I'm not sure anyone could handle a whole paper cup's worth. 😉

Lil' Bit and Nan

This sounds delicious! I remember, before my grandmother passed away, when I would visit her at her farm every summer of my youth. She and I used to make up recipes using the fruits, veggies, and herbs from her gardens. We would also put a vase full of flowers from her gardens, on every table in the house. I remember making peach mint iced tea, veggie cheese bake, mint lemonade, homemade grape juice, beer sticks with rosemary, peach cobbler, and hydrangea bouquets. Sweet memories of childhood.

I recommend watermelon and cucumber! Juice both. I like to add this juice to strawberry smoothies, or mix it with limeaid, or just spritzer water (and gin).

I'm really not a fan of cucumber…or pickles for that matter (actually i don't think i've even tried a piece of cucumber because of how much i hated pickles..)

I have a recipe for triple strawberry popsicles i'm going to have to try in the next few weeks…fresh strawberrys, strawberry jello and kool aid….

If you try jalapeo, mix it with pink grapefruit juice. I know, sounds weird, but my husband is big into cocktails, and we aren't talking rum and cokes or cosmos, the man has mixers your have to special order…anyway, when I was pregnant and missing his cocktails, he made me one with pink grApefruit and a little jalapeo and it was amazing. I have had similar in bars.


whilst eating gazpacho the other (hot) day i thought it would be delicious as a popsicle.

also, a campari & soda -sicle would be good, but not for sharing with kiddies.


I love making my own fruit juice pops. I have a juicer and a tree full of apples so that's the most common. But it's a great way to use the last bit of fruit or juice.I Like to Chocolate milk pops for a 'less sinful' chocolate treat, Better than a fudgecicle, right? Try Chili – Lime, one of my favourite combos. To die for.


I just made these! They're currently in the freezer…freezing. 🙂

We didn't have lemons or lemon juice, so I ended up using a little pineapple juice from a can of crushed pineapple. It's delicious! So I highly recommend it in a pinch. 🙂
