Now that St. Patrick’s Day has passed, we are heading across the Irish Sea to bring you this new take on the British Pimm’s Cup cocktail. Pimm’s No. 1 is a gin-based liquor made with a blend of fruits and spices. It’s an incredibly refreshing cocktail, which is why we wanted to take it one step further and turn it into a delicious ice cream float. This drink is very versatile, so once you’ve got it down, try adding a few different fruits to the mix and let us know what you think.

Pimm’s Cup Ice Cream Float Recipe
Ingredients:
1 can of ginger beer
2 scoops vanilla ice cream
3 oz Pimm’s No. 1
Half a lemon
1 sprig of mint to garnish
Pour half of the can of ginger beer into your glass.
Next, add in Pimm’s No.1 and juice from half a lemon.
Add two scoops of vanilla ice cream.
Top off with the rest of the ginger beer and garnish with mint.
