4-Minute Carrot Cake in A Jar

Welcome back to Jaime’s Lazy Late Night Cooking Corner, the show where I whip up last-minute single serve microwave treats every Thursday while wearing my robe. This week we are celebrating Easter with a recipe for the easiest carrot cake ever – 4-minute microwave carrot cake in a jar, with bonus super quick cream cheese frosting. I mean, I could easily just eat the frosting in a jar and be satisfied, but this is a nutty, spicey, delicious microwave mug cake that’s just about as good as the real thing.

4-Minute Carrot Cake in A Jar

Microwave Carrot Cake with bonus easy cream cheese frosting.

Ingredients

Scale

Frosting:

1 tbls butter

1 oz cream cheese

1/2 cup powdered sugar

Cake:

1 egg
1/2 cup sugar
1/3 cup oil
1/2 cup flour
1/2 tsp vanilla
1/4 tsp salt
1/2 tsp baking soda
1 tbls cinnamon
1/4 tsp cloves

3/4 cup shredded carrot

1/4 cup chopped pecans or walnuts (optional)

Instructions

Frosting:

Soften one tablespoon of butter and one ounce of cream cheese in the microwave for ten seconds.

Stir in half a cup of powdered sugar to combine. Put it in the fridge while you make your cake.

Cake:

In measuring cup, add all ingredients in the order listed.

Mix together. Fold in 3/4 cup shredded carrot and, if desired, 1/4 cup chopped nuts last.

Pour into mason jar, large mug, or bowl. Microwave for two minutes to start. Check, then microwave longer (1-2 minutes depending on the power of your microwave). Remove from microwave, add frosting. Eat!
