Bring a little extra love to Valentine’s Day dinner with Roasted Potato Hearts. Roast up your potatoes and sweet potatoes in lovely little heart shapes, then serve with my favorite garlicky dipping sauce (that I put on everything – especially good with roasted veggies or salmon cakes).

Roasted Potato Hearts with Garlic Dipping Sauce

A fun recipe for roasted heart-shaped potatoes and sweet potatoes with garlic dipping sauce.
Ingredients
For the heart potatoes:
Sweet potatoes, about 3
Potatoes, about 3 (or whatever amount you want to eat)
Olive oil, 1/4 cup
Salt, 1 tsp
Pepper, 1/2 tsp
Chopped fresh parsley, 2 tbls
For the garlic dipping sauce:
Mayo, 2 tbls
Sour cream, 2 tbls
Lemon juice, 1 tbls
Garlic, two cloves pressed or diced
Minced chives, 1 tbls
Instructions
For the heart potatoes:
Preheat oven to 400
Wash and slice potatoes
Cut into heart shapes with cookie cutter
Coat with olive oil
Sprinkle with salt and pepper
Roast for 1 hour, until browned
Sprinkle with parsley
For the garlic dipping sauce:
Add all ingredients into a bowl, stir to combine
