4 Minute Potato Chips: A Microwave Recipe

Welcome back to Jaime’s Lazy Late Night Cooking Corner, the show where I whip up last-minute single serve microwave treats every Thursday while wearing my robe. This week we are eschewing our sweet tooth and going full-on PMS salt-craving (which is truly where my heart lies) with a recipe for four-minute microwave potato chips. Who knew it was this easy? Sprinkled with Love Party


Birthdays have been on our mind quite a bit lately – with Gordon and Jaime’s birthday in January, Scarlet’s birthday on April Fools’ Day, and Quinn’s birthday just on the horizon. We like to keep our eyes out for fun new themes, so when Kirstin from Kojo Designs sent over her Sprinkled with Love party we nearly fell over from cuteness overload.

Friday I’m in Love with Live Theater: 6 Ways to See Shows for Less

live theater for lessA few years ago Rick surprised me with season tickets to the beautiful new Dallas Theater Center for our anniversary. Swoon! As we know, it’s hard to get out on a date with the husband but it feels so great when we do. This guaranteed that we would be “forced” to get gussied up and hit the town at least once a month. You might think that your man isn’t the “theater” type but he could surprise you, and himself, with how much he enjoys it!

Now that the girls are getting a little older and can almost sit still for a few hours (sorry for the seat kicking, family sitting in row E orchestra left) we have started taking advantage of local shows like Bass Performance Hall’s current run of Cathy Rigby is Peter Pan.

Yes, Cathy Rigby exemplifies never-grow-up  by continuing to dazzle audiences with her fantastic vocals and aerial acrobatics. The dance numbers are outstanding, especially those featuring Jenna Wright as Tiger Lily. My girls are still talking about their favorite parts including Rigby’s last big surprise of the night!

For those in the DFW area, Cathy Rigby is Peter Pan runs through Sunday night and tickets start at $38.00. Here is a list of additional cities the tour will hit this Spring

This week we are celebrating Easter with a recipe for the easiest carrot cake ever – 4-minute microwave carrot cake in a jar, with bonus super quick cream cheese frosting. I mean, I could easily just eat the frosting in a jar and be satisfied, but this is a nutty, spicey, delicious microwave mug cake that’s just about as good as the real thing.

DIY No-Sew Rainbow Wands


Rainbows have been a hot topic lately with St. Patrick’s Day, rainy weather, and the birthdays of two special little ladies this past weekend (Happy birthday Scarlet & Niko!). We’re not quite ready to end this color craze and wanted you to join in the fun too with these No-Sew Rainbow Wands. Aren’t they adorable?! They make great party favors and are easy enough that the kids can join in on the crafting fun.

Melissa and Kellie from Icing Designs created these beauties, along with many other paper party goods they have in their shop. I’ve always wanted to throw an ice cream social just to make their DIY Ruffled Ice Cream Cones.
